Ingredients

1 boneless, skinless chicken breast (6 oz, pounded to even thickness)

1 tablespoon olive oil

1 tablespoon lemon juice

1 teaspoon dried herbs (basil, oregano, or thyme)

2 cloves garlic, minced

Salt and pepper to taste

Instructions

Mix oil, lemon juice, herbs, garlic, salt, and pepper in a microwave-safe dish

    Add chicken and coat completely on both sides

      Cover dish with microwave-safe lid or plastic wrap (leave small vent)

        Microwave on 70% power for 3 minutes

          Flip chicken over carefully

            Continue cooking on 70% power for 3-4 minutes until internal temperature reaches 165°F

              Let rest covered for 2 minutes before slicing
