Ingredients

½ cup red lentils, rinsed

1 cup canned diced tomatoes

½ tsp turmeric

½ tsp cumin powder

Pinch of chilli flakes (optional)

Salt to taste

1 mug of water (≈ 250 ml)

Fresh coriander or spring onion (if you have it)

Instructions

In a large microwave-safe mug or bowl, combine everything.

    Cover loosely and microwave on high for 5 minutes.

      Stir carefully. If the lentils need more time, cook for another 2-3 minutes.

        Let it sit for 1 minute—it will thicken. Top with herbs and enjoy.
