Ingredients

2 large eggs

2 tablespoons milk

¼ cup shredded cheese (cheddar or your preference)

¼ cup diced vegetables (peppers, spinach, tomatoes)

Salt and pepper to taste

Optional: cooked bacon bits, hot sauce

Instructions

Spray a large microwave-safe mug with cooking spray

    Whisk eggs and milk together directly in the mug

      Stir in cheese, vegetables, and seasonings

        Microwave on high for 60 seconds

          Stir with a fork to redistribute uncooked portions

            Microwave for another 30 seconds or until set

              Let cool for 30 seconds before eating
