Ingredients

2 eggs

ΒΌ cup diced bell pepper

2 tablespoons diced onion

Handful of fresh spinach

2 tablespoons feta cheese

1 teaspoon olive oil

Salt, pepper, and garlic powder

Instructions

Add olive oil and vegetables to a microwave-safe bowl

    Microwave vegetables for 60 seconds to soften

      Whisk eggs with seasonings and pour over vegetables

        Microwave for 60 seconds, then stir

          Microwave for another 45 seconds or until eggs are set

            Top with crumbled feta cheese
